    Update: This beer really calmed down in the keg... The grassiness is gone and a light 'cool mint' flavor remains. The nose is much the same but extremely faint. The bitterness is very very nice. I still would not recommend loading up on late hopping and/or dry hopping of Polaris...

    Experimental Hops!! FHBS

    I single hopped a Saison (Wyeast 3711) with 1210. So far it is very nice. A mild citrus/grassy note from 1210 but it needs to condition a bit more. I haven't used my 6300 or 5256 yet.

    I hear ya. I'm really hoping it calms down in the keg because right now it tastes like mouthwash and fresh grass clippings. :cross: I got a majority of the Polaris used in this batch free so I figured what the heck.

    Looking for advice

    90% Belgian Pils 5% Munich 5% Wheat Wyeast 3711 Hop to your liking... If you want more old school use noble hops otherwise hit it with some American hops.

    Ok, I brewed up an all Polaris IPA. The sample going into the keg indicates a grassy minty mess. The bitterness seems nice but at this point I would highly recommend not loading up on Polaris for late boil. Anyone have an experience with Polaris? I saw a couple older threads but nothing...

    I brewed up an amber that was hop bursted with Mosaic. Wow. I got a lot of citrus but also some pine and earth. It wasn't over the top sweet/citrus that others have experienced. To be fair, I did bitter with a wee bit of Bravo and the amber is a bit roastier than intended so maybe that...

    Ya, but I can't give away all my secrets. ;) I ordered my Mosaic from freshops on my Mac air with no problems. I use Chrome though.

    I got mine yesterday and can't wait to put these to use as well. Mosaic just cut in line and is next up in the pipeline. Citra, Amarillo, El Dorado, and Belma take a seat. :tank:

    Mosaic (HBC 369) is on sale at http://www.freshops.com. I wanted to give these a try so I had to order some to go along with the ridiculous amount of other hops I bought this fall. Not sure if other places are going to get this hop or not... Cheers! -Dave

    Yup, I gave in as well. Citra and Belma. These along with my Amarillo and Bravo lbs are going to make for some hoppy brews this next year. Citra leaf is sold out now...
