    Using Rooibos

Thanks for all the advice on getting a low caffeine brew. I am now using two rooibos teabags and 4gms of loose leaf Jasmine green tea for my 3l brew. It ferments beautifully and had a very pleasant flavour on its own. I've been adding flavour during the 2nd ferment with either fresh mine...

    Using Rooibos

Thank you for the all the information. I have also read that loose leaf probably has lower caffeine levels that teabags. I think i will try loose leaf rooibos and loose leaf green tea for my next brew. Every little reduction helps!

    Kim Chi

I opened a jar of Kim chi today that has been in my fridge for a couple of months. It was bubbling away like mad and overflowed when I opened it. I removed a small amount and pushed the vegetables back down. Then resealed it. The smell was fine. A second jar from the same batch was fine. Would...

    Another newbie question!

Thank you Boer! I usually try to keep it around 26C but I don't have a temperature controller so it is a little hit and miss. Your reply really helps.

    Using Rooibos

I made my first brew with 4 organic black tea bags. After that I used 2 black tea and 2 rooibos Can I use rooibos only or do I need to continue to include the black tea. I ask because I am usually caffeine free. Many thanks for any help

    Another newbie question!

I'm making my kombucha in 3L batches. I'm just about to start my 4th brew. Could anyone advise on a few points please. Is 30C/86F too warm for fermentation? Should I remove/divide part of my scooby as it grows? I'm hoping the white spots in the photos are not mould, they're just milky white and...
