It's all roasted. The degrees Lovibond (ºL) will tell you how much its roasted. It will vary depending on the manufacturer. Just chocolate can have a 200ºL difference.
Blackprinz = debittered black malt. Used for color without adding the burnt bitterness flavor.

Got this advise from a commercial brewer a few years ago - Soak them for 30 seconds or so and then separate and keep the vodka. Put the NIBS in for 3-4 days before kegging/bottling.

Immersion chiller tips:
1. Always test the chiller before you immerse it.
2.Run hot water over the connections to warm up the vinyl tubing. It will become soft. Tighten the clamps while the tubing is soft and you should get an excellent, leak free, seal.

White vinegar is used to clean copper, not sanitize it. Soak it in white distilled for 60 min to clean. all you need is 6oz per 5 gallons.
Absolutely sanitize your chiller prior to first use. I usually soak mine in Star San for a bit. 1oz per 5 gallons.

Im a server at a large brewery and when I use their yeast, I use about a cup per 5 gallon batch. Thats with it being 99% viable. And your not going to know how viable your slurry is unless you dilute it and count the yeast cells, like the big boys do for each batch.

i'd be careful. I have heard of chillers made out of cheap copper will actually melt (copper coated). Make sure its pure copper, and you wont have an issue.
Northern Brewer sells a good immersion chiller, and from what I understand its, USA made.
