    Northern Brewer Caribou Slobber

I've had similar experiences with Windsor yeast. Seems that it gets cranked up quickly, chews like hell for a day, then slows down a lot. You definitely should warm it up a bit, and maybe give it a swirl. Don't expect it to get down real low though. It is not a high attenuating strain...

    Small And Cheap Steps

I've stayed low tech here as well. Spent the most of my money keeping yeast happy, and even then I've kept it to a minimum. The results are in, and it's been worth every penny!

Pumping ice water vs pre-chiller in ice water

I've never tried a pre chiller, but I do use the ice water recirc method thru my IC. I have a pond pump in a 5 gal bucket that I just cover with water, then dump a bag of ice on top...hook the pump to the IC, and let the outlet recirc back to the bucket. I only hook this up once the temp has...

Nottingham ale yeast vs US 05

I find that the Notty doesn't attenuate quite as much as the US-05, so you may find that your finished brew will be just a touch sweeter/maltier than you normally get. It does tend to take off pretty quickly, and it also will finish quickly, at least as compared to US-05. It also tends to floc...

04 and 05, temps too warm?

My vote would be to leave it down there, based on my experience with that same beer. Mine stays in the ferm chamber from start to finish at about 66F, and turns out delicious. I will say that this is only with US-05...haven't brewed it with S-04. Pull a gravity sample, and taste it. If it's...

    What does your LHBS charge?

Actually, HBUSA will sell you the specialty grain by the ounce...at least over here in the Hampton store they will...I've had them actually open a 1# bag to give me 4oz for a recipe...plus, they offer 10% off for AHA membership. I priced this up, and with the discount it came to just under 38...

Gap Setting For Cereal Killer Mill

I have the same mill, and with my gap set at .035, my mash efficiency (per BS) is consistently between 75 and 76%, and I've never had any sparge issues. One of my recipes goes over 80%, and it is consistent as well. Love my cereal killer!

Who has the most obscure hobby?

Not a westie here...in fact just the opposite. I'm in Hampton, VA near the mouth of the Chesapeake Bay. Now if I can ever get my HF antenna back up and in working order... 73, Jim K8SI (BTW the 8-land call is from my hillbilly days in WV)

    What did Santa bring you?

Got a kit for doing 1-gal test batches and an oxygenation set-up (wand, stone, tubing, regulator). Other stuff too, but that was the beer-related stuff...all that I ask for! Now...what recipe to try first....

    What are you drinking now?

Old Rasputin RIS...WOW! First time I've ever had this one...WOW! Roasty, toasty, a little dark fruit, nice residual warming on the finish from the alcohol, nice mouthfeel...awesome stuff!
