    Palmer's Saison and math

I'm trying the White Labs 566 - the Saison II yeast, mostly because the LHBS didn't have either of the Wyeast strains you mentioned. I'm not really confident in my ability to harvest from bottles (though that does intrigue me, and might be a future project), so I tend to stick to prepackaged...

    Palmer's Saison and math

Greetings, oh wise collective.... So, I'm looking to brew a "by the book" saison -I'm still fairly new, so I'm just dialing in my processes and not getting too crazy yet. For the record, here is Palmer's malt bill for the recipe: Pilsener LME - 7.7lb Cane Sugar - 1lb Wheat LME -...

    Carbonation Questions on Scottish Ale

I bottled on March 17th, so it'll be 5 weeks this coming Sunday. As for the 1.15, I thought that I would aim for the middle of the (given) range; in hindsight probably should have just gone for the upper end.

    Carbonation Questions on Scottish Ale

That is my tentative plan; I just want to make sure that adding a carb tab won't turn them into bottle bombs. Since I'm not the first to make this mistake, I hoped maybe someone would come along and say "I did that too, and didn't die." Like I said, the beer is damn good. :)

Glass with Oxygen barrier caps (grabbed them by mistake at the shop and didn't notice until I got home)

    Carbonation Questions on Scottish Ale

Hey all, Recently brewed up a 80 shilling Scottish Ale from Palmer's "Brewing Classic Styles", bottled it on March 17th. I've also been trying out Northern Brewer's iBrewmaster iPad app to keep track of everything; before this batch, everything has been smooth sailing. Problem is, in this...

First brew, not worried - but...

Update: The krausen dropped out sometime between checking on Monday and Tuesday. To be safe, I let it sit until this morning (only active action was to check FG each day). It kept rock solid at 1.012, so I racked to a bottling bucket, primed, and bottled.

First brew, not worried - but...

Pretty sure I'm at my FG - I hit 1.012 four days straight (OG was 1.048). I don't have a fridge yet; it's next on the list. Trying to spread out the equipment purchases to lessen the SO's icy glare. :) I have no qualms about letting it sit longer - just want to get it right.

First brew, not worried - but...

Hello all, So I brewed by first batch about 3 weeks ago (Munton's Bock Kit, only I replaced the yeast with Safale US-05). Brew process went well, and everything was sanitized within an inch of its life. Never really had a major bubbling in the airlock - but I didn't worry. There was other...
