RIS can take a year to taste good.I brewed one that tasted like a penny in my mouth until about month 8.Best beer I've done.You have a big beer that needs time.

Have you experimented with sugars?I find unrefined sugar to give a rum-like flavor.A lot of ESB's use invert sugar.

If you are advancing to all grain,get the brew software.I use, and get decent results with Beersmith. Price is reasonable too.As for malt complexity? Malt forward-More complex. Hop forward-Clean malt profile to showcase hops.

I did an IPA and used 2 oz Summit in the last 5 minutes.Tangerine and orange pulp flavor.May be my new favorite hop.Although 2 oz of Simcoe as a dry hop addition may have influenced that as well.
