You shouldn't need a gravity reading after adding the juice or whatever you you use to back sweeten as long as no more fermentation is taking place. You just need the volume of liquid added. From there it's just a simple dilution factor based on your original alcohol content and volume added

Any advice on working an oz of citra into this recipe? I found an extra oz in the freezer and was thinking about maybe a late addition or dryhop. I'm not too familiar with citra so any help would be appreciated.
The only benefit I see from a false bottom on a boil kettle would be to filter out whole hops. I use a side pickup tube on my keggle and have no issues with using an immersion chiller.
One other thing to consider is wall clearance when trying to open the lid with the tower attached. If I want to open mine fully, I have to move the keezer about a foot away from the wall.

Check out BIAB (brew in a bag) if you haven't already. If you have the ability to do full boils and chill all you need to go all grain is the bag. It's an easy way to go AG and many, including myself, have had great results.
