I have epic fails on getting some of my batches of cider to carbonate in the bottle and without giving you a long history of the things I have tried, wanted to ask the following questions.
Hydrate the yeast prior to using it in bottling?
The manufacturers all say "yes" and my local brew shops...

I made a 5 batch of cider using juice where I measured an adjusted OG at 1.050. The sample of juice I measured was from a 5 gallon batch BEFORE I added 2 lbs. of honey. I then pitched it with Grand Cuvee yeast.
From what I have read, you are supposed to add .035 to the OG for each...
This is good stuff made by an orchard. I added about 1/3 jar so no big deal. I might try a lot more in another batch some time to get a "spiced" cider because it does contain cinnamon.

It's funny you mention Premier Cuvee. I am doing a batch with that right now. I pitched this morning and by bed time, it was rocking. I had some juice that was not the sugariest I ever bought so I wanted to wring out as much alcohol as I could.
I've always had this crazy idea to throw some apple butter in to the carboy with the juice or in secondary fermentation. Two reasons - more sugar and I thought the cinnamon used in the apple butter would make it interesting. Truth be told, the cinnamon flavor might ferment out completely...
What yeast do you think would work well in fermenting appple juice blended with [I think] 20% grape juice (and why)?
