I would say provide a recommended path forward along with a guide for making the change away from MEGA, then set a date \ version change that would not longer support MEGA. Obviously if they do not update to that version then the MEGA continues to work. I am currently on MEGA, as long as there...

I like to take my homebrew to homebrew club meetings, friends and family, and other gatherings away from my house.

If you have access to a drill press, easier to drill your tap holes while the collar is not assembled and that will ensure a nice straight hole as well!!!

I have the same height as you as mine is dual hinged. The freezer hinges are at the bottom of the collar, meaning I lift the entire collar out of the way. I was only referring to using the door hinges on the freezer top attached to the top of the collar.

I have used the recommendation from Gorm of cracked coffee beans and it worked really well. Some people cold brew the coffee as well and add that. I found the cracked coffee beans worked great though. Just keep sampling every couple of days.

I have done similar to the recipe above, except that I added the cocao powder to the mash instead of the end of the boil. However I did not use chocolate extract.

I would make something out of stainless parts and make a stand for it. Jaded does something similar in copper, but you could piece it together out of NPT Stainless elbow and straight threaded pieces. Not need for teflon tape either :) https://jadedbrewing.com/products/the-electrichair
