Were you able to stir the mash during conversion. I found that if I give a good stir every time I check temp, I get much better conversion. If you are going to make bigger beers more often, then think about upgrading. You could easily use your current mash tun as an HLT and upgrade to a 10...
No experience with false bottom other than neighbor and brew teacher forgetting to put his in during double brew day. I personally have the igloo, but use a stainless braid hose. I have a t fitting and connect the hose on both ends to the t.
I had similar issues in my first batch. was really bummed bc all samples tasted great. my process was to add a 3/4 cup sugar to 1 cup water, boil, cool, add to bottling bucket then bottle. One thing I do now is give it time in the bottling bucket after racking onto the sugar solution.

Also depends on your equipment. I've done a hefe with no rice hulls and 60% wheat. But i have a stainless hose in the mash tun. with 7lb pils you should be good, just dough in the pils first. if you are inclined to use rice hulls, you can soak them overnight so you wouldn't have to worry...
just do it. a few things i do to make my day easier.
1) set up all all equipment the day before, test for leaks.
2) gather water day before.
3) have check list of ingredients and procedure day of.
4) have fun.
5) have a brew(typically after boil)
wow, never seen that much sediment even in sours. you may want to post a little more detail on your processes. You may have just bottled before the beer was ready to bottle and fermentation complete.

I pretty much had an octoberfest in mind when putting together my keezer. Thought it would be nice to be able to lager and serve at the same time. but those plans didn't really work out but I do like the compact nature of the 7cuft.
sounds like a good recipe. Best hefe I made this past year was 60/40 wheat to Pils. Used 1 0z hallertau at 60, but added about 3 oz of fresh sour orange zest at 5 mins. Did the same recipe w/o the zest and was just a bit too sweet.
