    Buttery mead???

    Keep it simple and just use Lalvin CY3079. Imparts a nice chardonnay like buttery taste and aroma. Gives the mead a velvety mouthfeel as well. Slow to start, and slow to clear, but very cool yeast strain. 15 lbs honey for a standard 5-gallon batch 4g grape tannin (optional) 10g of CY3079...

    Orange marmalade mead

    I've made an orange marmalade mead with orange blossom honey that is to die for. Basically just dilluted the marmalade into the water before adding the honey. 71B as the yeast with a 1.040 FG Was brilliantly clear in under two months as well.

    Yeast for a cyser

    I would recommend D47 for cysers. It helps bring out much more apple character. 71B is always a good choice as well.
