First Attempt at building my Own Extract recipe

While I have never used Melanoidin, from what I have read a little goes a long way. I would cut back to 6 maybe 8 oz tops.

    Gravity over shot.

SG*Volume/desired SG=final volume. Ex. 5 gal 1.060, but you wanted 1.050 60 SG*5 gal= 300 gravity points/50=6 gal. So add 1 gallon of water to get your desired gravity

    Specialty grains seprate from mash?

I did this for a RIS. I mashed about 24# of 2 row with a little crystal 60 in my mash tun. I steeped 2# mixed chocolate and carafa III in a separate vessel. Added both together at the start of the boil and it came out great.

    Huge RIS Questions

Here is a long post. Sorry Ok let’s do some calculations. I am making some assumptions so adjust as necessary. Assuming 0.5 gal dead space in your BK and MT you need 5.5 gal wort post-boil and based on your numbers you will have ~ 6.92 gal pre-boil 9 gal (strike water) – 2.88...

Take the guessing out of efficiency Part 3

Qcbrew, I think snowtires was referring to hot scotchy; where you pull off a portion of the sweet wort and mix with scotch for a nice warming drink. They can account for a considerable loss in efficiency.

Adding bourbon to Holiday Brew too much?

I just bottled my bourbon-oaked brown ale. I did a 6 gal North England brown ale and split the batch. Separately, I soaked 1 oz of medium toast oak chips in bourbon (just covering the chips about 1.5 fl oz) for 3 days. I poured off half the bourbon and added the remaining chips and bourbon to my...

Where to find Cedar Spirals or Cubes

My guess is there is a reason you can't find them. From what I have read, and I have just starting reading up on wood aging, you really don't want to use any type of conifer wood (pine, cedar, etc.) because they impart a nasty terpene flavor.

If you haven't already search "hop spider" in the forums. I use this with great success.

    Real honey vs honey malt

I did a mini-mash with honey malt and a little 6-row. Mashed at 154 until conversion was done by iodine test and then diluted with water until I got 0.5 gal with a SG of 1.050.

    Real honey vs honey malt

I have done some experimentation with honey and honey malt. I made a lightly hopped (IBU 20) base wort with 2-row 85%, 10% white wheat and 5% carahell (SG 1.052). I split the batch into 4x4 gal. Then I did the following additions: Carboy 1 : Control - No addition Carboy 2 : 0.5 gal, 1.050 SG...
