I did look around to the best of my ability to try and find better prices on items. I did find RTD probes on ebay for much less money, but was confused that they were all 4 pin connections vs 3 pin.
I guess here is the comparison.

After pricing all of the parts out. It comes very close to the 30a BIAB kit from Electric Brewing supply (Especially when you figure in shipping from multiple companies). I am able to order the kit without their PID so I can just put in the EZboil...

Made with Barnwood, corrugated steel, a grape brandy whiskey barrel, and epoxy on the top with metallic blue silver and white.
I will try and make this short and sweet, but it usually doesn't end up that way for me. If I use wrong terminology feel free to correct me as I have little experience around the internal components of electronics, and I want to do it right. The good news is my buddy knows a fair amount about it...
