    Why is my beer so bitter ?

    Are you talking about the wort or the finished beer? You don't comment on the fermentation so it appears you are tasting the wort, it will always taste much more bitter. Wait until after fermentation. Apologies if I am misunderstanding.

    where did the hops go??!!

    I keep seeing this and it isn't true. I have a pale ale with Magnum bittering and Simcoe dry hop, no other additions and I get fantastic hop flavors (pineapple, pine, citrus and orange). It leaves a clean, crisp beer with great hop flavor.

    I will be I'm Wausau in a few weeks. Where should I go and what should I look for? I like hoppy beers and stouts but am anxious to try any good local beers. Can I get Surly in this area? Obviously will be looking for anything from New Glarus. Staying close to Great Dane, will give them a try...

    Citra /nugget IPA

    I haven't used that combo before but sounds good. Citra can be overboard on fruit. The herbal/spicy character of nugget would provide a great balance. You have me thinking........

    How close is your "local" home brew shop?

    I love Portland! I have two within 2 miles and a third about 5 Miles away. Each has a little different variety of grains so one stop shopping isn't always the best option......

    Great article. There is one area where I have had a different experience, the amount of boil off. I brew both 5.5 gallon and 4 gallon size batches. I do these in the same brew pot and find I get a different boil off amount between the two. I boil for 75 minutes on both and on the 4 gallon...
