    water bottle as secondary??

    The theory is that the PET plastic used for our beloved fermenters has a higher resistance to degradation by alcohol than the HDPE used for water bottles. Looking the same ≠ being the same. That being said, I did ferment a Brett saison in one without any impact on flavor.

    Don't worry so much, you'll be fine without the tape. Your fermenter has a nice, thick layer of co2, which is denser than oxygen.

    I'm willing to bet that the wort didn't get mixed well enough after you topped off, meaning that the fender wort is at the bottom and the watered down wort is at the top. It'll even out as it ferments.

    Building a small fermentation chamber out of a minifridge

    I used that setup for quite a while. Cut the door shelves off with a utility knife and Bob's your uncle. You do have to leave the outer edge of the panel the door shelves are molded into in tact though so that the door seals properly.
