    I'm going to make a couple deer hams out of a fine mule deer doe. I have Mortons Tender Quick but all the recipes I read and looked at are telling me to use Pink Salt. What is the difference and what do you fella's use? A good recipe to make them would be much appreciated. Thanks.

    I have done it both ways and also with my smoker. I think in my own twisted little mind that the dehydrator is the best.

    Smoking mountain lion meat???

    Ive never eaten Cat or Dog as far as I know but I have eaten bear quite a few times. I will do it again too. I really enjoy them in the fall when they have been out eating in grain crops. Ken.

    I forgot canned whole chicken. Try and find that now. The wife will do it for me once in a while when we find older chickens for sale.

    You are good to go.. Calculate your cooking time and thats it. Try to keep your oil up in temperature when you first set the bird in the oil. I cook a 14# bird in 50 to 55 minutes so 4 minutes a pound. 1 thing to remember make sure there is no ice or water in the bird when you give it the big...

    I start mine in a 5 gallon bucket and do not use an air lock. When I put it in my secondary a carboy then I use a lock.

    worlddivides. Thanks for the reply. When Mom made it I believe there was a Teaspoon or Tablespoon of Chicory the cream I think was a half cup or cup. Dang I wish I would have had her write it out.... Worst is it was all made by memory like most of the older people (real cooks) do! LOL. Ken.
