Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

So after a month in primary and two weeks in secondary, I decided to go ahead and bottle this past weekend. I had a red wine sitting in carboy as well that needed to get bottled, so just did them both. I will say that the coffee version was really good but holiday tea version came out awesome as...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Last year I made a red ale for the holidays, and took 1 gallon and added the spiced tea from the popular Winter Ale recipe: https://www.homebrewtalk.com/showthread.php?t=145580 It came out great and turned out to be a big hit. So I am just taking that same tea and using it for a gallon of the...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

Thanks Btaz I plan on bottling 3 gallons as is, then 1 gallon with some cold brew coffee, and the last gallon with a tea of vanilla bean, orange peel, cinnamon and ginger root (basically a holiday stout).

I gave the yeast a good stir yesterday and it hasn't had much effect. So for bottling, a cask yeast like Lallemand CBC-1 would be recommended?

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

So a little more than 3 weeks since this went to primary, fermentation has all but stopped. Water is in now in both sides of my S-bubble air lock where up until this weekend, the CO2 was still forcing the water to one side. It got down to 1.032, not quite the 1.026 I was hoping for. I will...

Imperial Stout Russian Imperial Stout (2011 HBT Competition Category Winner)

I brewed this a little over a week ago, all grain with the whole grain bill going into the mash including specialty grains. I plugged everything into the Bru'n Water and adjusted my mash and sparge water according to the results of the spreadsheet. Seems to have worked really well. I ended with...

    Help me use aging ingredients

I like this. I was thinking of a black IPA as well given grains I'm dealing with. Most of them came from the popular India Red Ale thread (thanks again, Tim) which I brewed last summer and it came out great. Coincidentally, I just finished my last bottle of that a couple of hours ago. Obviously...

    Help me use aging ingredients

I could use some suggestions on using up the DME, grains, and hops that I have in my inventory. Most everything is between 6 and 9 months old (properly stored). But looking to clear out as much as I can and get some fresh inventory in. These might not stretch to a full 5 gal batch, but I'd be...

Specialty IPA: Red IPA India Red Ale

So after 3 weeks of bottle conditioning, I'd like to report that this came out great. Started at 1.060 and got it down to 1.014 within 10 days using Wyeast 1056 at a constant temperature of 68 degrees. A little bit on the darker side in comparison to pics others posted, but definitely my best...

    Fruit Beer Succulent Strawberry Blonde

I was going to wash them up well followed by a quick soak in StarSan. Idea from this thread: https://www.homebrewtalk.com/f12/strawberry-blond-recipe-ideas-intergalactic-only-94502/

    Fruit Beer Succulent Strawberry Blonde

I ended up just pitching the WLP001 without a starter. Some minor activity noticable in the airlock after 4 hours, and it was off and running within 24 hours. A little longer than usual for me, but I attribute this to the fact that it's a 2 gal batch in my 7.9 gal primary bucket. Lots of head...

    Fruit Beer Succulent Strawberry Blonde

Actually, I've never used one either (beer or wine) and have never had a problem. Normally I just drop the yeast (dry or active) into a 1/2 cup of warm water 30 mins before pitching. But this is the first time I'm using WLP001 and most recipes that use it seem to use a starter. Plus White Labs...

    Fruit Beer Succulent Strawberry Blonde

One other question. I'm planning on making a two gallon batch of this over the weekend. What would you suggest for my starter (how much water + DME and how much of WLP001 should I use)? Thanks

    Fruit Beer Succulent Strawberry Blonde

Has anyone done BierMuncher's popular Centennial Blonde with strawberries? https://www.homebrewtalk.com/f66/centennial-blonde-simple-4-all-grain-5-10-gall-42841/ Recipe is very similar except it's got some extra carapils in place of the wheat and uses Centennial hops (obviously) instead of...
