    Danstar London ESB Dry Ale Yeast - Anyone use it yet?

    So I just kegged it and the wlp099 took the gravity all the way down to 1.006 (about 10-20 points more than I wanted, but now it's at least palatable and not like drinking syrup). In the future I'll probably only use the ESB yeast on low gravity beers that I want plenty of sugars left over.

    Spike brewing or SS Brewtech kettle

    Just a note: the Spike kettle is much thicker 1.2mm vs .8 mm for the SS Brewtech. So for the extra cost you're getting more than just the welded fittings. My question though is the extra thickness needed? Overall the SS Brewtech is far cheaper (for the 10 gallon size, about $75 cheaper).

    Using plastic as a 2ndary

    Personally, I'd be concerned about head space in those, even if you go to the neck the wide opening still leaves far more head space than what you have in a standard PET or glass carboy.

    I'm having to use the cool brewing bag now also, I don't mind changing out the ice everyday, you only really have to do it during the first week of fermentation (I keep mine inside so after a week I allow it to rise to ambient temperatures) and I always check on my beer a couple of times a day...
