I'm on my 3rd extract brew. I think they have all turned out pretty good except all three have had a "sour" maybe even metallic finish.

I'm only a couple batches in. Looking through The Joy of Homebrewing recipes. I was thinking the Irish red or the ipa. Both call for roasted malted barley. Is this just any grain I choose and roast it like the recipe says? Or am I missing something?
