    Use it. I keep a starter constantly going and just feed it every 4-6 weeks. Like calder said though, if its kept cool they will be in better shape.

    13 gallon French oak barrel

    So my wife just splurged and got me a new 13 gallon French oak barrel from Midwest homebrew supply. Do I really need to do the barrelkleen thing or can I just do the water soaks to get the wood to swell before I filler up? Thinking about doing a stout then maybe an ipa before bugging it up...

    Does it harm chilled beer to be brought to room temp then re-chilled?

    Your good. I had to do that with a few kegs when i needed to chill and carb some kegs for a wedding. When i re-chilled and it tasted just the same.

    Uncontrollable fermenting temps.

    Seems like a low OG... What did the kit say it was supposed to be? Most likely it was just an inaccurate read like you said. How long has it been since brew day? I would let it ride at 70 for another week, dont rack, just wait and take a reading then. A lot of my fermentations go gang busters...
