Even if you think it's something bad, the smart money is on not dumping the batch. Unless your cat horks a hairball in it, it's worth bottling/kegging it and seeing how it goes.

You're right - you might get some more caramelization but I doubt you'll notice much difference, especially for a big beer.

If you want to try a lighter ale that still has good flavor try the cream ale "cream of three crops" from the recipe database.

It's most likely fine. Check your gravity a week or so after you pitched the yeast. If it's lower, you're making beer. If it isn't, pitch more yeast. If you don't have a hydrometer, it's well worth the investment.

You could always split the batch and prime half with dextrose alone and half with dextrose and rice solids and compare the two. Science!

They're both good. HTB is efficient and has excellent explanations if the science involved. JOH is much more winding and quirky, with a large focus on enjoying the hobby. If you're a math/science/engineering type I would go with HTB, and if you're an English major type I would go with JOH...
