I picked up a Youngs wine kit, a 7 day 30 bottle merlot.
Was among a box of bits a got from a boot sale, i only wanted the demijohns but was all bundled together lol

It's 3 years out of date, but figured there was nothing to loose giving it a go. Left the yeast pack out and used Lalvin RC212 and some nutrient.
Other than that i have just followed the instructions.
Currently fermenting away nicely :)

After reading some reviews of it, I've come to realise it isn't the best wine kit on the market....

I'm wondering if anyone has any tip for how it can be improved?
Was thinking maybe the second concentrate pack could be swapped for a grape concentrate?
From what i have read the supplied one can give a strong chemical/glycerin taste...
Or maybe it would benefit from both?
 
you could add a tablespoon of wine tannin, or a couple of cups riasons, or currants...you have already started so it's too late to back the volume down to 5 gallons. Or, just let it run and learn the process and enjoy it however it comes it out!
