This is another great topic! I highly recommend the Scott labs Fermentation Handbook click here there is a wealth of knowledge in that handbook, you'll learn which yeast strains are recommended for various varietals and the characteristics, temp range, alcohol tolerances, nitrogen needs and so on.
I've been using the handbook as a learning tool for a few years.
