Pilsner Malt, English Cara-stan, German Cara-Foam (a dextrin malt, provides body), and Torrified Wheat. The Munich and Maris Otter malt was removed with Cara-foam being added.

The hops for the 2010 IPA are Cascade first addition, Columbus second, Centennial third, and Simcoe fourth. A total of 18 pounds for a ten hectoliter batch

so, I quick added it to BS2 and came up with

9 lbs Pilsner
1 lb carafoam
1 lb carastan
1 lb torrified wheat

& 1 ounce each hop addition according to the schedule from the blog

grain bill gets it to 5.9% (1.058 OG). I just added all the grains at 1 lb, then increased the Pilsner until the ABV% was right. are the ratios OK?
 
From Beersmith with generic alpha values and C30 substituted for Carastan.

I would suspect that you could knock down the Carastan and Carafoam (whatever that is) but someone more familiar with the beer will hopefully have more guidance. For almost any "westcoast" IPA I'd probably like to see some more hops in the last 15 minutes.

brewed this up on Tuesday night in the rain

OG - 1.061
SRM - 7.9
IBU - 60.9
WLP041

10 lbs Pilsner
.5 lb carafoam
1.25 lb carastan crystal 40
.25 lb torrified wheat

short protein rest @ 140, 15 minutes
sacch rest @ 152, 60 minutes

90 minute boil
1 oz cascade, FWH
1 oz columbus, 30 min
1 oz centennial, 15 min
1 oz simcoe (I know how much you guys love it!) @ FO

was a little over on volume, little short on OG but hit 78.4% efficiency going into boiler. a personal best
 
re-brewed on 7.27, AGAIN, in the pouring rain. renamed this "Rain Delay IPA" bottling today or tomorrow or maybe next week

talked to one of the brewers at the NOVA Brewfest and he said they added Cluster hops to the mix. I was pressed for time and didn't have my brewsheet on me, so I couldn't get more specifics from him. I added the Cluster as the FWH and shifted everything back, leaving the Simcoe and Centennials as hopstand additions. he did confirm that there is NO DRYHOP in this

another change from the original batch is that I dropped the temp in the protein rest down to 132°.

hit all #s, temps, gravities and volumes during this brew, fermented for the first week in the low 60s, raised to 70 for the 2nd week.

So was the first attempt a close rendition? How about the second one? Love some 8 point, probably one of the best IPAs I have had, or at least the one I liked the best.
 
not nearly cloned, but it is a good homebrew. I'm having issues getting any hop flavor or aroma out of anything, so I'm deeking a little with my water chem. just a little burton salts this time

was scheduled to bottle next week, but I might run out of patience and do it today or tomorrow
 
bottled this past Saturday, tasted pretty good warm and flat

going on vacation for a week, will fridge one up and check it out when we get back

I have been a little underwhelmed by their IPA, but its not bad by any stretch. May try to pick some up fresh soon. My office just moved 5 minutes away from their Outpost Brewery in Lexington.

Let us know how the clone turns out.
 
They may just be my favorite brewery. IPAs usually arn't my first choice but I do really like this one. I love the Vienna lager and the Turbo Cougar blonde bock.

Yeah..not a huge fan of the Vienna style in particular. But theirs is one of the best I have had. Heard their Scottish Ale is bangin..
 
tasted today and hop aroma and taste are still not coming thru

going to move the simcoe & centennial to a dry hop next time

still a pretty good tasting beer; my best so far (only 11 batches). for that I will credit fermentation temperature control. ice bath & dropped a temp probe into the bucket and the reading never got above 67° for the first week
 
UPDATE: entered into homebrew club comp and out of 6 entries I came in...

**DRUMROLL**

4th, 5th or 6th.

OK scores, averaged 15 out of 20. good comments, mostly "good beer - not enough hop aroma or flavor - not to style"

it's a really good-tasting beer and I'm proud of it. but, it's a good pale ale, not a good IPA and it's definitely NOT an 8 Point

Jamil & Tasty would say, "NOT cloned"
 
I will be bottling my version on the 5th of October. Ill let you know how it came out once it bottle conditions for 2 weekes or so.
 
two weeks later and this is turning out to be an outstanding beer. a little more hop flavor coming through, but still not the IPA I set out to brew and no closer to a clone

but I like it

next rebrew probably in November
 
I'll probably dry hop my version for the last couple of days. I'll just have to see what hops I have on hand once I get home.
 
another update: maybe I misheard the brewer, but found out they added Chinook, not the Cluster I thought he had said, so I'm updating my hops.

subbing the Chinook and moving them from FWH to 60 min and pushing later additions further, going to double dry hop the Centennial and Simcoe

Grog - I bottled the batch right before I had to go on an 8 week trip to Arizona. I will be back home in about 2 weeks where my wife has already stuck a few in the fridge for me!
 
Ya know I've tried the Vienna Lager but have skipped over the 8 point every time I'm in the store. Going to have to get some and sample.

What do you think you need to tweak to get it to be close to the flavor profile?
 
my biggest issue so far with cloning this is the biggest issue I have with all my beers; I can't get any hop flavor or aroma. I'm also having problems getting a beer to turn out any color lower than a 14 or 15 SRM, so I think I'm going to have to start deeking with my pH. until I get those resolved and brew a decent beer, I'm afraid I can't do much experimenting with it. especially being restricted to one batch a month

as far as tweaking it, for now I like the malt profile as it is, so I'm working on the hops side of it.

I've done the recipe in post #5 in this thread, but not the one in #20. scheduled to brew in May
 
I apologize for not getting back to you sooner! Below is what I ended up BIABing. Mash temp was 155 for 90min and then raised temp to 170. I think the 90min mash was overkill and would definitely drop it to 60 in the future. I used a reharvested American Ale strain for fermentation. I also dry hopped in the secondary for 7 days but I'll have to find the brew records for what I actually used for the dry hopping. Overall the beer was awesome and it was my first AG/BIAB. It was almost nothing like DB 8pt but I will brew again in the future!
