I’m doing all extract with specialty grain, 5 gallon brews in 7 gallon buckets.
Have done 7 brews and all have been good. One was really really good.

2 times, when I racked from fermentation to bottling bucket, I found brown scum globules floating around on top of my beer. What is it?

I'm gonna guess its Krausen but with out a picture not sure one can say unless you give more detail. What was the texture ? Could be yeast rafts , could be pellicle. Look those images up and maybe you will see what it was .

Yep, usually its yeast that hasn't dropped to bottom, totally harmless. You'll usually know if its something like mold or a bacterial intrusion...furry, or will have weird veiny lines through it. Look at the post titled "Post your infection' for examples of bad floaties.
