Weh hay

I got my new gear this week, 8 gal ss pot, wort chiller, big burner to boil it all.

Then I find out I have scored 10 beer crates, and 2 11 gal kegs, all legit, a friend if mine runs a pub.

How do I make the most of this stuff

If you want to do All Grain then convert one of the 11 gallon kegs into a mash tun, the other into a BK and use the 8 gallon for an HLT. This would require at least one extra burner...
