I came across a couple interesting threads that stated that they were pitching two yeast strains into one beer. I tried to do some research to see why one would do that but I couldn't find anything that explicitly said what effects this has on a beer. Can someone try to explain it for me? Why does one pitch two (or more) yeast strains in the same beer?

The reason I pitch more the. One strain is for flavor... I like funky beers and sometimes I don't want to wait for some yeast for attenuation so I pitch a heartier yeast to get more attenuation and finish drier. Commercially brewers will sometimes pitch another yeast for bottle aging sometimes for flavor sometimes to keep there house strains to themselves. I recommend experimenting with yeast, it can have great results.
