i opened up a bottle of port's isabelle proxiums and i need some help making up a wild ale recipe like this. i have a full vial that i cultured up from the dregs and it smells good. im not sure about what base beer to go about.

i want something light in color, medium bodied, and i want the yeast to shine and stand out. i also have some oak cubes that were soaking in izzy dregs for a few months. im sure that even if i mash at 152f the body will still be dry at the end because the bugs will eat everything up.

what do you guys think of these grains?

2 row, wheat malt, acid and carapils.

around 10 ibu's with aged or dry hops

also, its been since October since ive had it so it would be hard for me to describe what i remembered. but im going by this:

last time i brewed a sour, it tasted great, body was spot on but it didnt hold carbonation really well. after i poured it, i would start to get flat in about 10 min. or less. ive been hearing that protein in the beer will hold it better.
i dont know how to design a beer, so if you guys can help i would greatly send over a few bottles when its finished.
