In the first 3 to 5 days of fermentation most recipes call for you to cover the wine, stir everyday, and take a reading with the hydrometer. My question is... do I stir first than use the hydrometer. Or use the hydrometer first than stir. I keep getting 2 different readings. The one before stirring is not the same as the one after stirring. Which one do I use.
 
If you stir and then take your sample you should get a more legit reading because you will have degassed the must somewhat. The dissolved CO2 can impact the reading. If in doubt simply take 3 consecutive readings, do not forget to adjust for temperature calibration, and average the three readings.
