As a lover of big IIPAs I wanted to create my own rendition that could render a man or woman intoxicated enough after only a few beers to go home with the ugliest person in the room, while still tasting great. Quite a bit of research went into what makes a IIPA be good. Imbue with caution as when I drank my sample on an empty stomach I definitely was feeling the effects with out having really tasted the alcohol.

So after the two weeks on dry hops it dried out just a little more &ndash; FG: 1.013 11%ABV. It also cleared up quite a bit as you can see.


I also didn't even cold crash this...

An update after bottling:


So I cracked open a short bottle to check carbonation and this will need some more time in the bottle before it is fully ready. It tasted amazing though! It has a strong malt backbone that is rounded out nicely by a citrus and earthy pepper aroma/flavor. The bitterness is just where I was hoping it would be but it turned out more like a triple IPA or a thin barley wine. Here is a photo of it!
