Well, I bottled up an Amber on Sunday morning and planned to brew up a pale ale that afternoon. Things got busy and ran to late to brew. Then I forgot to put the yeast cake into the a jar in the fridge. Kids with learning from home really is distracting. So here it is Wednesday, yeast is still in the fermenter, cover on and with about an inch of beer over it. Can I still use it or should I dump the cake of Nottingham and start with a fresh pack?

If it has been kept cold and doesn't have any off-notes aroma-wise, I'd use an appropriate amount for another batch.
Otherwise...imo, taking account of the cost and effort to produce a batch of good beer, sketchy yeast does not fit in my math...

Cheers!

I agree, I do it on purpose, 2-3 weeks in cold, 1 inch of beer on top - no problems. Lager/ale yeast - does not matter.

I did that once (yeah right only once) with Notty and when i got back to it the air lock was bubbling, so pitch away ( as long as it smells good)
