I have an 8 oz jar of harvested slurry. I'm thinking of using just a teaspoon or two for a 1 gallon batch. Can I just seal the rest and go back to it when I brew a larger batch?
 
Yes, just make sure the spoon is sanitized and give the lid a little spritz before putting it back on.
