Using 3787 Yeast Cake

I am planning on kegging a light Belgian beer (Wheat extract with a pound of Caravienne) I brewed a couple weeks ago and used 3787 Trappist yeast. The beer was 1.040, and the yeast was about 6 months old so I made a 2L starter.

Given the cost and effort to build up this yeast, I was thinking about brewing a new beer and racking straight into the fermenter on top of the yeast cake. I am thinking about a quad since I have the built up yeast, might as well take advantage of it. 2 questions:

1) What should I know about racking onto a yeast cake? Do I need to remove some of the yeast, or I will I need all of it given I will be brewing a big beer? I use buckets, so I can easily scoop some out if necessary.

2) Any suggestions on a recipe for a big beer that uses 3787?
