I was thinking while I was brewing this weekend if it would be possible to put a mesh screen on top of a kettle while it is boiling, to keep anything from floating in the wort while boiling. My conern is that the condensation formed on the screen would fall back into the wort causing a decreased boil off rate and gravity errors due to the extra water not boiled off. Anyone try this before or any thoughts?
 
I would be more concerned with DMS if you had the condensation falling back in the wort. I would just stick with an open top.
 
Ya I've thought about it and decided to leave it open. However if you must brew outside, you might be able to do something to partly shield it with mesh without completely covering it
