Does a hydrometer accurately read the level of Brix in either the 1st or 2nd fermentation of Kombucha?
 
A hydrometer and a refractometer will measure the sugar content of the Kombucha before and after it ferments. However, unlike beer and wine, they cannot tell you how much alcohol is in the Kombucha because the bacteria converts the alcohol to acetic and other acids.
