Stuck between 2 yeast choices

I’m a beginner brewer on my 4th 5 gallon batch of beer and want to start Christmas recipe (see below) and am pondering the recommended Safale s-04 or Omega OYL-015 yeasts. My apartment is between 70 degrees and will probably be dropping to 60 degrees in the fall. I’m not particularly into floral, fruity flavors and I love a hoppy, spicy flavors. I’m really wanting it to taste like I’m drinking a Christmas tree so am also considering adding some cinnamon and orange after a couple of weeks (I’m not going to transfer to a secondary bucket as advised on this forum). Any thoughts about the yeast choice? Am I risking disaster by getting creative and adding stuff seeing as I’m just starting out?
