I’m trying to gather parts to build a spunding valve, but I can’t seem to find lead free brass options.

Is it important to use lead free, even though it shouldn’t be in contact with the beer?

Morebeer.com has a stainless relief valve.

I would suggest to use tubbing between QD and the Tee.
First, I couldn't find stainless 1/4 flare to NPT fitting. The one on Amazon rusts easily. On the other hand, stainless barb to npt and barb to flare are cheap and easy to find.
Second, the pressure gauge, relief valve, and the tee will be kept far away from your beer. I don't know how to sanitize those parts. Keeping them away make me comfortable.
Moreover, around 4 inches extra height is necessary to use a sounding valve without tubbing.
