I've just started to brew and made an all grain American Amber Ale, turned out very well but it had the final steps about the amount of sugar (ie.corn sugar etc) to use for carbonating in bottles. Is there a rule of thumb for this depending on the quantity being brewed?

Ditto - 1 oz per gallon or even a little less depending on the style. Bring a couple of cups of water to a boil, then turn off the heat and toss in the sugar. It'll dissolve and sanitize - then you put it in the bottling bucket before transferring from primary/secondary. It mixes really well this way and gives an evenly carbonated batch.
 
Rule of thumb is 3/4 ounce to 1 ounce per gallon for most styles.

That being said, I really believe in using a priming sugar calculator. I wrote the one in my signature.
