Fizzling Out?

I've had some of my beer show great amounts of head and lacing, but given some time and it seems all fizz is gone. Why might this be?

I ran into this problem with dirty/oily glasses, but also it could depend on recipe and mash schedule/temperature.

Youre not drinking it fast enough.

I wash my glasses in the dishwasher. When it goes into the dry cycle I scrub the inside with Star San and return.

I don't mash much (yet). It's mostly extract and steeping grains.

It could be that I'm drinking slow...sometimes an hour passes by the time I'm done. But it's more common to last 20-30 mins. Depends on what I'm doing.
