A buddy and I have 15 gal of RIS in a used rye barrel right now that I intend to sample in about a month or so (Vinnie nail).
We're going to bottle these brews, but probably will force carb and bottle with a beer gun. I don't really want 10 gallons of my share to be all the same (my barrel, my base malt - I get more!) so I'd like to change things up a bit. My favorite RIS is KBS, which is big on coffee and chocolate. In the keg, I'd like to add cold brew coffee, but also some sort of chocolate. I've used nibs before with mixed results, but want to see what others might recommend for this application. Are nibs best here? Chocolate liqueur? Hershey's syrup?
