So I recently purchased a keg off of craigslist and one of the keg post connectors was very slightly stripped.

It took quite a while to remove the old post and now I can not attach a new one.

Is there anything I can do to salvage this keg?

Couple of ideas. First you might be able to borrow a tap and die set and redo the threads on the keg. Another idea is to screw the post on from the inside (nimble fingers required). If you can get it started that way you can possibly screw it in and clean up the threads that way.

Keg posts are very odd sizes, you won't find a die to rethread it. I would put a new poppet in it and a new o ring on the dip tube and try to crank it on with some liquid Teflon paste on the threads and plan not to ever remove it again.
