I'm certain these types of threads get posted on the regular around here but I just wanted to brag on my latest beer. This is my 3rd total brew and 1st non kit recipe. I did a 15 Minute Pale Ale with cascade hops. This is the clearest, best tasting beer I've done yet. After reading everything about extract brewing, I was afraid it wasn't possible to brew a worthwhile extract beer. This one has changed my mind.

Title: 15 Minute Pale - Cascade

Brew Method: Extract
Style Name: American Pale Ale
Boil Time: 15 min
Batch Size: 1 gallons (fermentor volume)
Boil Size: 1.1 gallons
Boil Gravity: 1.048
Efficiency: 35% (steeping grains only)


STATS:
Original Gravity: 1.053
Final Gravity: 1.010
ABV (standard): 5.61%
IBU (tinseth): 46.27
SRM (mosher): 9.74
Mash pH: 0

FERMENTABLES:
1.2 lb - Dry Malt Extract - Light (85.7%)

STEEPING GRAINS:
3.2 oz - American - Caramel / Crystal 60L (14.3%)

HOPS:
16.5 g - Cascade, Type: Pellet, AA: 7, Use: Boil for 15 min, IBU: 39.12
7.5 g - Cascade, Type: Pellet, AA: 7, Use: Boil for 5 min, IBU: 7.14
7 g - Cascade, Type: Pellet, AA: 7, Use: Boil for 0 min
3.5 g - Cascade, Type: Pellet, AA: 7, Use: Dry Hop for 2 days, IBU: 0

YEAST:
Fermentis / Safale - American Ale Yeast US-05
Starter: No
Form: Dry
Attenuation (avg): 81%

I have extract, partial mash, BIAB and all grain. I have had equal success with each. You can make great beers with all those methods.

Articles on 15 minute boils seem to be hard to find using web searches. Here's a couple that I've seen in the last couple of years.

You can brew really good beer with extracts, even without boiling.
In the current issue of Zymurgy (Last Drop) I wrote about brewing under less than ideal conditions, including no-boil.
I've also submitted a no-boil piece that is supposed to be published in the Nov/Dec Last Drop.
