What would be the max of Munich1 I could use in a Pale Ale? In an IPA? I have a 50# sack that I would like to use relatively quickly.
 
Theoretically you can use 100% Munich. It's totally self-convertible.

If you indeed have Weyermann's Munich Type I it would probably make a wonderful APA/IPA. It's very light (10°L)** and has a wonderful flavor/aroma.

**Correction:
Munich I 5.1 - 7.3°L
Munich II 8.1 - 9.9°L
 
There are differing degrees of Munich malt. The darker varieties are low in diastatic power. Good, light Munich is a fantastic base malt, as mentioned previously.
 
1-2 pounds in a pale ale or IPA adds a malty flavor and doesn't overpower the hops and overall balance. If you want to use it up fast, though, an all Munich doppelbock is great. Did that with 10L American Munich and it was awesome.
