I am 6 days in to a 2 gallon batch of Jack Kellers jalapeno wine. Wondering if I can add either apple juice or apple juice concentrate to the secondary when I rack. Would like advice on how to do so and how it changes the basic recipe. Thanks!
 
I add AJ to a lot of my wines when topping off. I use Indian Summer (cheap, good, readily available), it has a potential of about 6% so It would most likely lower your ABV. Apples, similar to raisins tend to lend a hand to the body of most wines, although YMMV. I can't speak for the Jalapeno wine specifically though. IMHO, I say AJ is better than headspace.
