Could you grow 5 different hops on this design?

Sure. I might add some method to lower the cordage as they grow and let the bines climb along more cordage. Otherwise they may get tangled on top.

Yes, but once they reached the top you'd never be able to sort them out. If there were all the same variety, it would be fine.

You really don't want to cut the growth tip on a hop bine, and trying to keep them from growing up would be like herding cats...
