I brewed a belgium double the end of last year. I sanitize like crazy. I even wear gloves. It has set up for 3 months now. I used one carb drop per bottle. I put one in the fridge for a week and I opened it. Poured it. The head was about 4 inches. Upon tasting the carbonation was extreme. This also happened to me after I brewed a porter. Any help on why this happens and how to prevent it would be greatly appreciated.
