I brewed a belgium double the end of last year. I sanitize like crazy. I even wear gloves. It has set up for 3 months now. I used one carb drop per bottle. I put one in the fridge for a week and I opened it. Poured it. The head was about 4 inches. Upon tasting the carbonation was extreme. This also happened to me after I brewed a porter. Any help on why this happens and how to prevent it would be greatly appreciated.
 
Assuming that "one carb drop" of whatever brand you used was appropriate for your bottle size and the level of carbonation you were looking for, and assuming sanitation was good, the remaining possibility is that you bottled before fermentation was complete.
