Thinking about adding apple, cinnamon, maple syrup and vanilla bean in a secondary fermenter for the saison that is currently sitting in the primary. Any thoughts?

All of those flavors? Awesome. I just made a chile beer but only kept them in through primary. However, in your case the cinnamon sticks and vanilla beans would be great in a secondary. Just sterilize them beforehand! As far as the apple and maple syrup, these can be fermented (sugars). Add them before going into secondary or else your beer will be a sweet one!

Cheers!
