So I've brewed a couple clones and kits, but I'm trying to create my own. I've brewed roughly 12, 5 gallon batches (all extract) and I'm ready to attempt a dipa (my favorite style by far). My first stout turned out awesome, but I'm a bit nervous about this one. I'm trying for a sweet, honey like dry taste with a medium amount of hops So far it goes:
Batch size 5.5 gallons
Boil size 3 gallons
6# light dme
3# maris otter lme (thinking I might tone this down a bit
.5# caramel 20
.5# crystal 45
.5# honey malt
.5# carapils
Last five minutes add 1# honey and 1# corn sugar
Hops:
2oz warrior at 75
1oz warrior at 60
1oz simcoe at 25
1oz simcoe at 20
1oz cascade at 15, 10, and 5
2 oz simcoe at flameout
Dry hop after 3 weeks with 2oz centennial and 1oz citra
Any help is greatly appreciated, and don't be nice. I need all the help I can get since a lot of dipa recipes are all over the board and now I'm nervous and confused.
