I'm not sure this is the right place for this question, but here goes.
I have lots of berries this year, already put up a freezer full and wine. But now my black muscadines are coming in and I want to do something different. I will make wine from the bronze ones in a few weeks, but I don't want to put up any more dark wines, so want about a wine/beer cross?
I have a couple lbs of pilsner dry malt extract on hand, what if I substitue that for sugar in a standard wine recipe? Maybe add a bit of mugwort or heather tips for good measure.
Any thoughts?
