Hi all,
I'm currently building a fermentation chamber out of a old chest freezer I got off Craigslist for free and a Johnson controller. There was roughly 2 inches of insulation in the top of the freezer that I had to remove in order to make room for the airlock. My question is, will my freezer still hold it's temps without the insulation, or is it absolutely necessary? I'm trying to avoid having to build a collar on it.
If it matters at all, the freezer is a super old Montgomery Ward Compact 5 freezer. Any help would be greatly appreciated. Thanks!
